Bakewell Tart is a British specialty from shortcrust pastry, jam and almond cream.
My idea was the Bakewell Tart to bake in muffin format in the hope that I am not insulting the classic Bakewell Tart with this non "authentic" but really good muffin. The texture of the muffins are very nice and moist, the distinctive cherry flavor of Bakewell comes from a teaspoon of cherry jamon the bottom of each muffin. On the whole, I am not inclined...
