Light Blueberry Pie / Leichte Blaubeertorte


Nachmittags Kaffee und Kuchen?? Oh ja! Ich weiß, das klingt gut. 
Nichts erinnert mich mehr an Sommer als frisch gebackene Blaubeerkuchen voll von großen und prallen, süßen und saftigen Beeren.
Ich habe das Rezept aus einer Zeitschrift und es war perfekt!

Leichte Blaubeertorte

Zutaten für den Biskuitboden (18/20cm Durchmesser)
2 Eier
1 EL Zucker
1 EL Mehl
1 EL Speisestärke
1 Prise Salt

Zubereitung für den Boden
Eine Springform mit Backpapier auslegen. Backofen auf 175°C Umluft vorheizen.
Eier trennen, Eiweiß und Salz steif schlagen dabei lasst ihr den Zucker reinrieseln.
Eigelb sehr cremig rühren, Mehl und Speisestärke mischen unterheben. Danach das Eiweiß unterheben.
Teig in die Form füllen, glatt streichen und im vorgeheizten Ofen 10-12 Minuten backen.  Auskühlen lassen.

Zutaten für die Füllung
250g Blaubeeren
3 Blatt Gelatine
100g Frischkäse
100g Joghurt
50g Zucker
Saft einer halben Zitrone
150ml Sahne
1 TL Vanillezucker
250g weiße Schokoladen Fingerbiskuit o. Löffelbiskuit 



Zubereitung der Füllung
Die Gelatine einweichen. Die Beeren verlesen, waschen, abtupfen, ca. 200g davon pürieren. Frischkäse mit Joghurt und Zucker glatt rühren. Das Blaubeerpüree einrühren. Zitronensaft erwärmen, Gelatine ausdrücken, darin auflösen und in die Joghurtmasserühren. Kalt stellen.
Sahne mit Vanillezucker steif schlagen und die Hälfte unter der Joghurtmasse heben, wenn diese zu gelieren beginnt. Die creme auf den Biskuitboden streichen und ca. 3 Std. kalt stellen.
Tortenring entfernen. Löffelbiskuits halbieren und um den Tortenrand stellen, leicht andrücken. Tortenoberfläche mit der übrigen Sahne in Rosetten auf die Torte spritzen und mit übrigen Blaubeeren garnieren.

Light Blueberry Pie

Afternoon cake and coffee?? Oh yeah ! I know that sounds good.  
Nothing reminds me more of summer than a freshly baked Blueberry Pie full of big and plump, sweet and juicy berries.
I have the recipe out of a magazine and it was perfect!

Ingredients for the biscuit base (18/20cm diameter)
2 eggs
1 tablespoon sugar
1 tablespoon flour
1 tablespoon cornstarch
1 pinch of Salt

Preparation of the base
Lay out a springform pan with parchment paper. Preheat an convection oven to 175 ° C.
Separate the eggs beat egg whites with salt until stiff while you let the sugar trickle in.
In the very creamy egg yolk stir flour and cornflour. Then fold in the egg whites under
Pour batter into the mold, and bake in preheated oven for 10-12 minutes. Allow to cool down.

Ingredients for the filling
250g blueberries
3 sheets of gelatin
100g cream cheese
100g yogurt
50g sugar
Juice of half a lemon
150ml cream
1 tsp vanilla extract
250g white chocolate fingers biscuits

Preparation of the filling
Soften the gelatine. Picked the berries, wash, dab, puree 200g of it. Mix cream cheese with yogurt and sugar until smooth. Stir in the blueberry puree. Warm lemon juice, press out gelatine, and dissolve it, now stir into the yogurt  mass.
Whip cream with vanilla sugar until stiff and fold the half of it in  the yogurt ground when it begins to gel. Give now the cream on the biscuit base and place about 3 hours in the fridge.
Remove cake ring. Cut ladyfingers in half and place around the edge of cake, gently press on. Decorate with a piping bag the cake surface with the remaining cream into rosettes and garnish with remaining blueberries.
