Aubergine cream soup with roast beef tartare

Ingredients for 4 people
Eggplant cream soup
500 g eggplant
Extra Virgin Olive Oil for frying
3 cloves of garlic
1 onion
1 liter of vegetable stock
200 ml cream
1 tablespoon sour cream / sour cream

  • Peel eggplant and cut into thin slices. Peel the garlic and onion and cut into small cubes. squeeze the Lemon.

Auberginencrèmesuppe mit gebratenem Rindertartare

Zutaten für 4 Personen
Auberginencrèmesuppe
500 g Auberginen
Natives Olivenöl Extra zum Braten
3  Knoblauchzehen
1  Zwiebel
1 Liter  Gemüsebrühe
200 ml Sahne
1 EL Sauerrahm/saure Sahne
1   Zitrone
Erdnuss öl

Rindertartare
160 g Rinderfilet küchenfertig
Steakgewürz
Erdnuss öl


  • Auberginen schälen und in feine Scheiben schneiden. Knoblauch sowie Zwiebel schälen und in kleine Würfel schneiden. Zitrone pressen.
  • Backrohr auf 180 °C Umluft vorheizen.
  • Im Topf  mit Olivenöl die geschälten Auberginenscheiben sowie Knoblauch und Zwiebel ohne Farbe ca. 5 Minuten anschwitzen. Anschließend  mit  Gemüsebrühe und Sahne aufgießen,  kräftig abschmecken und ca. 15  Minuten weichkochen. Zum  Schluss  mit Sauerrahm/saurer Sahne, Zitronensaft sowie Erdnuss öl verfeinern und fein pürieren.
  • Rinderfilet  in  kleine  Würfel  schneiden,  mit  Steakgewürz  kräftig würzen und Mithilfe einer  Frischhaltefolie zu einer Rolle formen. Diese Rolle in 4 gleich große Stücke teilen und in Erdnuss öl kurz anbraten, sodass das Filet innen noch roh bleibt.

For a 27cm sponge
5 eggs
1 pinch of salt
5 tablespoons water, hot
125g sugar
2 tsp vanilla sugar
little zest of lemon
125g gluten free flour
Gluten-free baking powder 1 tsp


  • For the sponge, separate the eggs and beat the egg whites with a pinch of salt until stiff. Then open egg yolks with hot water, add sugar and vanilla sugar and stir well until frothy mass (about 3 minutes).
  • With a cake scraper the gluten-free flour with baking powder carefully fold over the egg yolk mixture, then the egg whites with the lemon zest.
  • Pour batter into a lined with baking paper heart shape and bake until golden about 20-25 minutes at 180 ° C. Remove from the mold and cool completely on a wire rack.
Tip: a teaspoon of cocoa and chocolate 50g grated enter into the dough for a chocolate biscuit.

Glutenfreier Biskuitboden Rezept

Zutaten für eine
5 Eier
1 Prise Salz
5 EL Wasser, heiß
125g Zucker
2 TL Vanillezucker
etwas Abrieb von einer Zitrone
125g Glutenfreies Mehl
1 TL Glutenfreies Backpulver


  • Für den Biskuit, die Eier trennen und das Eiweiß mit einer Prise Salz zu steifem Schnee schlagen. Anschließend Eigelb mit heißem Wasser aufschlagen, Zucker und Vanillezucker zugeben und die Masse sehr gut schaumig rühren (ca. 3 Minuten).
  • Mit einem Kuchenschaber das glutenfrei Mehl mit Backpulver über die Eigelbmasse vorsichtig unterheben, danach das Zitronenabrieb mit dem Eischnee.

  • Den Teig in eine mit Backpapier ausgelegte 27cm Backform füllen und bei 180°C ca. 20-25 Minuten goldgelb backen. Aus der Form entfernen und auf einem Kuchengitter vollständig abkühlen.

Tipp: Für einen Schokoladenbiskuit einen Teelöffel Kakao und 50g geriebene Schokolade in den Teig geben.
