For the filling, beat the mascarpone in a bowl with a wooden spoon until smooth. Beat whipping cream until stiff. Mix sugar and egg yolks with the whorls of the hand mixer creamy, fold in the Mascarpone spoon for spoon. Fold in the whipped cream.
