Fishersman’s Pie


Fishersman’s Pie

Von wegen die Briten können nicht kochen. „Rubbish!“ Blödsinn!

Es gibt viele verschiedene Variationen von Fisch Kuchen. Traditionell wird der Belag mit gestampften Kartoffeln gemacht, so wie einem Shepherds Pie, die Füllung wird eine oder mehrere verschiedene Arten von Fisch enthalten, je nachdem, was verfügbar ist. Dies könnte Weißfisch wie Kabeljau oder Schellfisch, geräucherter Fisch, Lachs und Garnelen sein. Bei uns viel die Wahl auf  Kabeljau (Cod Lion), dieser Fisch ist ein guter Porteinspender, bekommen tun wir den Cod Lion  aus einem Zuchtbetrieb in Schottland.  

Zutaten für 6 Personen
900g weißes Fischfilets, wie z.B. Scholle, enthäutet
150ml trockener Weißwein
1 EL gehackte frische Petersilie, Estragon oder Dill
175g kleine Pilze, in Scheiben geschnitten
70g Butter, plus extra zum Einfetten
40g Mehl
125ml Sahne
900g Kartoffelpüree
Salz und Pfeffer

Zubereitung
Den Backofen auf 180°C vorheizen. Eine Auflaufform mit Butter einfetten.
In die Mitte der Auflaufform den Fisch legen, mit Salz und Pfeffer würzen, den Wein übergießen und die Kräuter darüber streuen.
Mit Folie abdecken und 15 Minuten braten, bis der Fisch weiß ist, danach die Flüssigkeit vorsichtig aus der Form entfernen.
Die Pilze in einer Pfanne mit 15g Butter kurz anbraten.  Die restliche Butter in einen Topf geben und das Mehl einrühren, und nach und nach den Fischsud zufügen dabei solange weiter kochen und rühren bis es andickt. Vom Herd nehmen.  Sahne hinzufügen und mit Salz und Pfeffer abschmecken.
Die Sauce und die Pize über den Fisch gießen, dann den warmen Kartoffelpüree darauf streichen und für 10-15 Minuten goldbraun backen.

Fishersman’s Pie

There are many different variations on fish pie. Traditionally, the topping is made with mashed potato, rather like a Shepherds Pie, and the filling will contain one or more different types of fish, depending on what's available. This might include white fish like cod or haddock, smoked fish, salmon and prawns.

Ingredients serves 6
900g / 2lb white fish fillets, such as plaice, skinned
150ml / 5fl oz dry white wine
1 tbsp chopped fresh parsley, tarragon or dill
175g / 6 oz small mushrooms, sliced
70g / 2 ½ oz butter, plus extra for greasing
40g / 1 ½ oz plain flour
125nl / 4 fl oz double cream 1 quantity Perfect Mash
salt and pepper

Preheat the oven to 180°C / 350°F / Gas Mark 4.
Grease a 1,7-litre / 3-pint baking dish with butter.
Fold the fish in half and place in the dish.
Season well with salt and pepper, pour over the wine and scatter over the herbs.
Cover with foil and bake for 15 minutes until the fish starts to flake. Strain off the liquid and reserve for the sauce. Increase the oven temperature to 220°C / 425°F / Gas Mark 7.
Sauté the mushrooms in a frying pan with 15g / ½ oz of the butter and spoon over the fish. Heat the remaining butter in a saucepan and stir in the flour. Cook for a few minutes without browning, remove from the heat, then add the reserved cooking liquid gradually, stirring well between each addition.
Return to the heat and gently bring to the boll, still stirring to ensure a smooth sauce. Add the cream and season to taste with salt and pepper: Pour over the fish in the dish and smooth over the surface.
Pile or pipe the mash onto the fish and sauce and bake for 10-15 minutes until golden brown.
