RASPBERRY RING / HIMBEER RING



Well ... the decorations are up, the cards are sent, the presents are wrapped and waiting on it to be put under the Christmas tree
and I've written a list of what we're eating during the festive season; so maybe it is a good time to sit back quietly and enjoy the Christmas season with a cup of coffee and a piece of cake.
A light, sweet but buttery sponge with fresh berries buried inside, and a little pot of raspberry jam to eat with it. This is a great cake to make if you do not have an electric mixer. The ring mould is optional ~ you could use an ordinary cake mould - but I like to put a small pot of jam in the centre of the mould to serve it.

RASPBERRY RING

Serves 6
Equipment: 22cm/8-inch ring mould cake tin: butter the tin well, then dust with flour

Ingredients
6og plain flour
1/2 teaspoon baking powder
180g icing sugar
70g ground almonds
6 egg whites
100g butter
200g raspberries
To serve:
Icing sugar
125g raspberry jam
Clotted cream (optional)


  • Preheat the oven to 180°C/35O°F/Gas mark 4 and prepare the tin. Sift the flour into a bowl with the baking powder, icing sugar and ground almonds and whisk them together. Beat in the egg whites. Put the butter in a pan, allow it to melt then turn up the heat a little and allow it to simmer until the solids in the base of the pan begin to turn golden brown. Immediately pour the butter into the bowl with the flour-almond mixture and mix well. Allow to cool.
  • Place the raspberries for the cake in the base of the ring mould. Spoon the cake batter over the top of them, letting it fall naturally around the fruit. Bake for 2O minutes - the sponge will feel springy to the touch when the cake is done.
  • Leave it in the tin to cool for 1O minutes then turn out on to a plate. Dust very lightly with icing sugar so it does not obliterate the sight of the raspberries peeping through the sponge. Put the raspberry jam into a small pot or shot glass and place it in the middle of the cake with a spoon in it. Eat slices of the cake with the jam and cream - like a very rich cream tea.

Nun ja….die Weihnachtsdekoration steht, die Karten sind verschickt, die Geschenke eingepackt, die nur drauf warten unter dem Weihnachtsbaum gestellt zu werden und ich habe eine Liste geschrieben von dem was wir in der Vorweihnachtszeit essen; so ist es ein guter Zeitpunkt um sich in aller Ruhe zurückzulehnen und bei einer Tasse Kaffee und ein Stück Kuchen die Adventszeit zu genießen.

Ein leichter, süßlicher, butteriger Rührteig mit frischen Beeren im Inneren, und ein kleiner Topf Himbeermarmelade in der Mitte.
Dieser Kuchen lässt sich problemlos mit einem Schneebesen verrühren, falls Du keinen elektrischen Mixer hast. Eine Ringform ist optional ~ Du kannst dennoch eine normale Kuchenform benutzen ~ aber ich mag die Ringform um ein kleines Glas Marmelade in der Mitte der Form zu setzen, um es dann so zu servieren.  

HIMBEER RING
6 Portionen
Ausrüstung: 22cm Ringform Kuchenform: Butter das Zinn gut, dann mit Mehl bestäuben

Zutaten
6og Mehl
1/2 TL Backpulver
l80g Puderzucker
70g gemahlene Mandeln
6 Eiweiß
100g Butter
200g Himbeeren

Anrichten

Puderzucker
125g Himbeermarmelade
Clotted Cream (optional)


  • Den Backofen auf 180°C / Gas 4 vorheizen und die Form vorbereiten. Das Mehl in eine Schüssel mit dem Backpulver, Puderzucker und gemahlene Mandeln zusammen vermengen. Das Eiweiß steif schlagen und unter die Mehlmischung heben. Die Butter in einen Topf schmelzen, die Hitze ein wenig erhöhen und die Butter leicht köcheln lassen, bis die Butter am Boden des Topfes goldbraun geworden ist. Sofort die Butter in die Schüssel zu dem Mehl-Mandelmischung geben und gut mischen. Abkühlen lassen.

  • Die Himbeeren für den Kuchen in der Ringform verteilen. Den Kuchenteig mit einem Löffel über und um die Himbeeren  verteilen. Für 20 Minuten backen - der Rührteig  ist fertig wenn mit dem Finder beim andrücken der Kuchen wieder zurück federt.

  • In der Form für 10 Minuten abkühlen, dann auf einen Teller übertragen. Leicht mit Puderzucker bestäuben. Die Himbeermarmelade in einen kleinen Topf oder Schnapsglas füllen mit einem Löffel darin und in der Mitte des Kuchens stellen. Den Kuchen in Scheiben mit der Marmelade und der Clotted Cream essen.
