Baileys Cheesecake Mousse / Baileys Käsekuchen-Mousse


Cheesecake dream with Irish Cream liqueur, crowned with a crown of chocolate mousse and with a slight hint of coffee.
Baileys cheesecake mousse

Ingredients (per cake tin 18cm)

Bottom of chocolate
200g digestive biscuits in chocolate
25-30g butter, dissolve
4 teaspoons cocoa

  • Grease the cake tin and put a bit of grease baking paper.
  • Crush cookies in a food processor / blender or in a closed bag. Add cocoa and melted butter and mix to a "wet sand". Then place into the mold and the bottom and sides. Put into the refrigerator.
The curd:
200g cream cheese philadelphia types
200g cottage cheese
90g sugar
2 eggs
30g potato flour
70g mascarpone cheese
150ml Baileys liqueur (or other liqueur Irish cream)
2 teaspoons vanilla extract

  • Preheat the oven to 150°C.
  • Cream cheese, cottage cheese, sugar and egg mix. Add the potato flour and combine. Pour Baileys liqueur and vanilla extract, mix. In a small bowl, thoroughly mix the mascarpone cheese with 3 tablespoons of curd and then add the rest of the masses and connect. Until smooth pour over the prepared bottom, align. Bake for about 50-60 minutes (the oven should also insert a casserole with water) .If the end of the cheesecake starts to brown too much, you can cover it with aluminum foil. Allow to completely cool in the oven is switched off, the door is repealed.
Chocolate mousse:
200ml chilled heavy cream
125-150g dark chocolate (minimum 60% cocoa)
2 teaspoons instant coffee (pounded to a powder) - optional
2 tablespoons mascarpone cheese, at room

in addition to sprinkle 1-2 teaspoons of cocoa

  • Dissolve the chocolate in a bowl over a pan of hot water so. water bath. Add coffee powder, mix well and set aside for cooling off.
  • Whip the cream to stiff.
  • For chocolate add the mascarpone and combine well (if the cheese is too cold and too much chocolate thickens put a whole for a moment again over garnikiem with hot water). To add 2-3 tablespoons of chocolate whipped cream and stir well to loosen a little weight. Then add the rest of the cream and gently but thoroughly to combine. Ready mousse ** freely decorate cold cheesecake (I've used piping bag with a large, smooth tip). Sprinkle with 1-2 teaspoons of cocoa. The reaction cooled before administration 1-2 hours in the refrigerator.

Käsekuchen Traum mit Irish Cream Likör, gekrönt mit einer Krone von Mousse au Chocolat und mit einem leichten Hauch von Kaffee.

Baileys Käsekuchen-Mousse

Zutaten (pro Kuchenform 18cm)

Boden von Schokolade
200g  Kekse aus Schokolade
25-30g Butter auflösen
4 Teelöffel Kakao

  • Kuchenform einfetten und mit Backpapier auslegen.
  • Kekse in einer Küchenmaschine / Mixer oder in einem geschlossenen Beutel zerkleinern. Mit Kakao und geschmolzene Butter mischen, so das ein "nasser Sand" entsteht. Dann in die Form auf den Boden und die Seiten drücken. Zum kühlen in den Kühlschrank.
Der Käsebruch:
200g Frischkäse Philadelphia
200g Quark
90g Zucker
2 Eier
30g Kartoffelmehl
70g Mascarpone
150ml Baileys Likör (oder anderen Likör Irish Cream)
2 Teelöffel Vanille-Extrakt


·        Den Backofen auf 150°C vorheizen.

·        Frischkäse, Quark, Zucker und Eier verrühren. Das Kartoffelmehl zufügen verrühren. Baileys Likör und Vanille-Extrakt unter mischen. In einer kleinen Schüssel die Mascarpone mit 3 EL Quark gut verrühren und zu den Rest der Massen verrühren, bis eine glatte Masse ist.  Quarkmasse in den vorbereiteten Boden gießen. Für ungefähr 50 bis 60 Minuten backen (im Backofen sollte auch eine Kasserolle mit Wasser stehen): Am Ende beginnt der Käsekuchen braun zu werden, dann sollte er mit Alufolie abdeckt werden. Im ausgeschaltet Backofen bei leicht geöffneter Tür Vollständig abkühlen lassen.

Schokoladenmousse:
200ml gekühlte Sahne
125-150g dunkle Schokolade (mindestens 60% Kakao)
2 Teelöffel Instant-Kaffee (zu einem Pulver zerstoßen) - optional
2 Esslöffel Mascarpone, bei Raumtemperatur

zusätzlich zu 1-2 Teelöffel Kakao zum bestreuen

·        Man löst die Schokolade in einer Schüssel über einem heißen Wasserbad, danach  das Kaffeepulver zufügen und gut mischen, beiseite stellen und Abkühlen.

·        Die Sahne steif schlagen.

·        Die abgekühlte Schokolade mit Mascarpone gut verrühren (wenn die Schokolade zu dick geworden ist, dann für einen Moment wieder über einem heißen Wasser leicht erwärmen). Zuerst 2-3 Esslöffel Sahne hinzufügen und gut umrühren, um ein wenig zu lockern. Dann den Rest der Sahne zufügen und gut verrühren. Wenn der Käsekuchen vollständig erkaltet ist, die Mousse  in einem Spritzbeutel mit einer großen, glatten Spitze füllen und auf den Kuchen nach Wunsch dekorieren. Das Ganze mit 1-2 Teelöffel Kakao bestäuben. Für 1-2 Stunden in den Kühlschrank stellen.
