Snowy Yule Log / Schneebedeckter Weihnachtsholzscheit



In Ireland, France, Belgium and other countries, there is a special Christmas dessert the Yule Log, which translated means as much as "Christmas log of wood" because of the Yule Log is reminiscent of a piece of tree trunk.The Yule Log traditionally consists of sponge cake. This is coated with a filling, is rolled to form a cylinder. Most often is a yellow sponge which is filled with a chocolate cream butter. 
However, there are many variations and family recipes for the preparation of Yule log. 
Biscuits, espresso or rum can help to build up a special flavor of the filling or glaze.
The custom of Christmas wood logs or Christian pad has a long tradition in Europe. With many ceremonies a log on the fire was allowed to burn for days at Christmas time. This served as a symbolic act of gratitude to the rebirth of the sun, when the days are getting longer. The ashes of the wood log’s was distributed to the next field and should bring a good harvest for the next year. The tradition of Christian pad holds to this day in some parts of Europe.
This sweet version of the original wooden log is traditionally served as dessert on the dining table of the first Christmas day. 


Snowy Yule Log

Ingredients
A little butter to grease
75g (3oz) plain flour
1tsp baking powder
4 medium eggs
150g (5oz) caster sugar
1tsp vanilla essence
75g (3oz) ground almonds
1 can of pears, cut into small dice
284ml double cream
2tbsp golden icing sugar, sifted, plus extra to dust
50g (2oz) flaked almonds, toasted


  • Preheat the oven to 180°C (160°C fan) mark 4. Grease and line a 33cm x 23cm (13in x 9in) Swiss roll tin with greaseproof paper. Sift together the flour and baking powder with ¼tsp salt.
  • Use an electric hand whisk to beat the eggs, caster sugar and vanilla in a bowl for 5-10min until pale and fluffy. The mixture's ready if it leaves a ribbon-like trail when you lift the beaters.
  • Using a large metal spoon, carefully fold in the ground almonds and the flour mixture, taking care not to beat too much of the air out of the mixture.
  • Pour into the prepared tin and spread the mixture in a thin layer right to the edges.
  • Bake for 12-15min until the edges begin to pull away from the sides of the tin and the cake springs back when you press it gently with a finger. Leave to cool.
  • Lightly whip the cream and the icing sugar in a bowl until the mixure forms soft peaks. Cut out a rectangle of greaseproof paper larger than the cake and dust heavily with icing sugar. Flip cake on to the paper. Remove the tin and carefully peel away the attached greaseproof paper.
  • Spread the cream over the cake, sprinkle with the flaked almonds and then with pear pieces. With the help of the paper, roll up the cake lengthways. Don't worry if cracks appear - they'll add to the log effect.
  • Carefully transfer to a serving plate. Dust with icing sugar and serve in thick slices.

In Irland, Frankreich, Belgien und anderen Ländern, gibt es als spezielles Weihnachtsdessert den Yule Log, was übersetzt so viel bedeutet wie „Weihnachtsholzscheit“, denn der Yule Log erinnert optisch an ein Stück Baumstamm.

Der Yule Log besteht traditionell aus Biskuitteig. Dieser wird mit einer Füllung bestrichen, eingerollt, um einen Zylinder zu formen. Am häufigsten ist ein gelber Biskuitteig, der mit einer Schokoladen-Buttercreme gefüllt wird. Es gibt jedoch viele Varianten und Familienrezepte für die Herstellung von Yule Log. Kekse, Espresso oder Rum können dabei für ein spezielles Aroma der Füllung oder Glasur sorgen.

Der Brauch des Weihnachtsholzscheits oder Christklotzes hat in Europa eine lange Tradition. Mit vielen Zeremonien wurde zur Weihnachtszeit ein Holzscheit im Kamin tagelang brennengelassen. Dies diente als symbolischer Dankesakt der Wiedergeburt der Sonne, wenn die Tage wieder länger werden. Die Asche des Holzscheits wurde auf dem nächsten Feld verteilt und sollte für das nächste Jahr eine gute Ernte bringen. Die Tradition des Christklotzes hält sich bis heute in einigen Regionen Europas.

Diese süße Variante des ursprünglichen Holzscheits wird traditionell als Dessert auf dem Mittagstisch des ersten Weihnachtsfeiertages serviert.

Schneebedeckter Weihnachtsholzscheit

Zutaten
Ein wenig Butter zum einfetten
75g Mehl
1 TL Backpulver
4 mittelgroße Eier
150g Puderzucker
1 TL Vanille-Essenz
75g gemahlene Mandeln
1 Dose Birnen, in kleine würfeln schneiden
284ml Sahne
2 EL Puderzucker, gesiebt, plus extra zu Staub
50g Mandelblättchen, geröstet


  • Den Backofen vorheizen auf 180°C (160°C Umluft). Ein 33cm x 23cm Blech Swiss mit Backpapier auslegen.  Das Mehl zusammen mit Backpulver und ¼ TL Salz in eine Schüssel sieben.
  • Mit einem elektrischen Handmixer die Eier, 150g Puderzucker und Vanille in einer Schüssel für 5-10min schlagen, bis die Mischung blass und flauschig ist.
  • Mit einem großen Metallöffel, vorsichtig die gemahlenen Mandeln und die Mehlmischung unterheben.
  • Die Mischung auf das ausgelegte Backblech bis zum Rand mit einer Winkelpalette aufstreichen.
  • Für 12-15 Min. goldgelb backen. Nach dem Backen den Biskuitteig sofort vom Blech herunternehmen, auf ein kaltes Blech stürzen und Erkalten lassen.
  • Die Sahne mit 2 EL Puderzucker in eine Schüssel steif schlagen. Biskuitteig großzügig mit Puderzucker bestäuben.
  • Die Creme über den Biskuitteig verteilen, erst mit den Mandelblättchen dann mit den Birnenstückchen bestreuen. Mit Hilfe des Papiers den  Kuchen der Länge nach aufrollen.
  • Vorsichtig auf einen Teller übertragen. Mit Puderzucker bestäuben und in dicke Scheiben schneiden.
