BLACK BOTTOM PIE



If you're wondering what a black bottom pie is, it's a pie with a bottom layer of dark chocolate custard, usually topped with whipped cream and chocolate shavings.
The story of Black Bottom Pie dates to the late fifties and early sixties at Otterbein. Dr. Fred Bamforth (picture at right) was professor of mathematics and a long time confirmed bachelor. He had established a tradition that whenever there was a faculty gathering that involved contributing food he would make and bring a Black Bottom Pie. The pie was delicious, and he was often asked for the recipe. He would always respond that the recipe was a secret that he couldn't share.

It would seem that it is now safe to share the secret, and especially, why it was a secret. After all, a recipe for Black Bottom Pie is not too hard to find. The reason for the secrecy was the fact that one of the prime admirers of the pie was President Lynn W. Turner's wife, Mrs. Vera Turner. You see, Mrs. Turner was a well known and staunch teetotaller, and the pie contained two tablespoons of rum. And, no, the alcohol didn't cook out; the rum was added after all cooking.

BLACK BOTTOM PIE

SERVES 6-8
250g / 9oz plain flour
150g /5oz unsalted butter
2 egg yolks
15-30ml /1-2 tbsp iced water
FOR THE FILLING
3 eggs, separated
20ml / 4 tsp cornflour
75g /3oz / 6 tbsp golden caster sugar
400ml / 14f oz milk
150g / 5oz plain chocolate, chopped into small pieces
5ml / 1 tsp vanilla essence
1 sachet powdered gelatine
45ml / 3 tbsp water
30ml / 2 tbsp dark rum
FOR THE TOPPING
1 75ml / 6fl oz double cream or whipping cream
chocolate curls

  • Sift the flour into a bowl and rub in the butter until the mixture resembles coarse breadcrumbs. Stir in the egg yolks with just enough iced water to bind the mixture to soft dough. Roll out on a lightly floured surface and line a deep 23 cm / 9 in flan tin. Chill the pastry case for about 30 minutes.
  • Preheat oven to 190°C/375°F/Gas 5. Prick the pastry case all over with a fork, cover with greaseproof paper weighed down with baking beans and bake blind for 10 minutes. Remove the baking beans and paper, return the pastry case to the oven and bake for a further 10 minutes, until the pastry is crisp and golden. Cool in the tin.
  • Make the filling. Mix the egg yolks, cornflour and 30ml/2 tbsp of the sugar in a bowl. Heat the milk in a saucepan until almost boiling, then beat into the egg mixture. Return to the clean pan and stir over a low heat until the custard has thickened and is smooth. Pour half the custard into a bowl.
  • Put the chocolate in a heatproof bowl. Place over a saucepan of barely simmering water until the chi melted, stirring occasionally until smooth. Stir the melted chocolate into the custard in the bowl, with the essence. Spread the filling in the case and cover closely with dampened greaseproof paper or clear film to the formation of a skin. Allow to then chill until set.
  • Sprinkle the gelatine over the water in bowl, leave until spongy, then place d bowl over a pan of simmering water i all the gelatine has dissolved. Stir into Thin remaining custard, then add the rum. Whisk the egg whites in a clean, grease-free bowl until peaks form. Whisk in the remaining sugar, a little at a time, until stiff, then fold the egg whites quickly but evenly into the rum-flavoured custard.
  • Spoon the rum-flavoured custard over the chocolate layer in the pastry case-Using a spatula, level the mixture, making sure that none of the chocolate custard is visible. Return the pie to the fridge until the top layer has set, then remove the pie from the tin and place r on a serving plate. Whip the cream, spread it over the pie and sprinkle with chocolate curls, to decorate.

Falls du dich fragst, was ein Schwarzer-Unterseiten- Kuchen ist, es ist eine Torte mit einer unteren Schicht aus dunklem Schokoladenpudding, in der Regel mit Schlagsahne und Schokoladenspäne gekrönt.
Die Geschichte der Black Bottom Pie stammt aus den späten fünfziger und frühen sechziger Jahren in Otterbein. Dr. Fred Bamforth war Professor für Mathematik und Junggeselle. Er hatte eine Tradition, immer wenn ein Vortrag über Nahrungsmittel gehalten wurde, einen Black Bottom Pie zu backen und zur Fakultät Versammlung mitzubringen. Der Kuchen war so köstlich das er oft nach dem Rezept gefragt wurde. Er reagierte jedes Mal darauf dass das Rezept ein Geheimnis wäre und er es nicht verraten könnte.
  
Es scheint, dass es jetzt sicher ist, das Geheimnis zu lüften und insbesondere, warum es ein Geheimnis ist. Immerhin das Rezept für Black Bottom Pie ist nicht allzu schwer zu finden. Der Grund für die Geheimhaltung war die Tatsache, dass eine der wichtigsten Bewunderer des Kuchens Präsident Lynn W. Turner’s Frau Vera war. Wie man weiß, war Frau Turner eine bekannte und überzeugte Abstinenzlerin, und der Kuchen enthielt zwei Esslöffel Rum. Und nein, der Alkohol verflog nicht beim backen; denn  der Rum wurde nach dem backen hinzu gegeben.

Black Bottom PIE

DIENT 6-8
250g Mehl
150g ungesalzene Butter
2 Eigelb
15-30ml / 1-2 EL Eiswasser
Für die Füllung
3 Eier, getrennt
20 ml / 4 TL Speisestärke
75 g / 6 EL goldenen Zucker
400ml Milch
150 g Zartbitterschokolade, in kleine Stücke gehackt
5 ml / 1 TL Vanille-Essenz
1 Päckchen(10g) Pulvergelatine
45ml / 3 EL Wasser
30 ml / 2 EL Rum
Für den Belag
1 75 ml Rahm oder Schlagsahne
Schokospänen


  • Das Mehl in eine Schüssel geben, und in die Butter reiben, bis die Mischung ähnelt wie groben Brotkrumen. Die Eigelbe kurz einrühren, dann das Eiswasser zufügen und  zu einem weichen Teig kneten. Den Teig auf einer leicht bemehlten Arbeitsfläche 23 cm rund ausrollen. Den Teig in eine eingefettete Tarteform drücken und für ca. 30 Minuten im Kühlschrank kalt stellen.

  • Backofen auf 190°C / Gas 5. vorheizen. Den Teig mit einer Gabel mehrmals einstechen, mit Backpapier abdecken und mit Backerbsen beschweren. Für 10 Minuten Blindbacken . Die Backerbsen und Papier entfernen und das Gebäck für weitere 10 Minuten backen, bis der Teig knusprig und golden ist. In der Form abkühlen.

  • Für die Füllung. Die Eigelbe, Speisestärke und 30g / 2 EL Zucker in eine Schüssel geben und glatt rühren. Die Milch in einem Topf erwärmen, bis sie fast kocht, dann in die Ei-Mischung schlagen. Zurück in ein sauberen Topf gießen und bei schwacher Hitze unter ständigem rühren köcheln lassen, bis der Pudding verdickt. Die Hälfte des Puddings in eine Schüssel geben.

  • Die Schokolade über ein heißes Wasserbad schmelzen. Die geschmolzene Schokolade in die eine Hälfte des Puddings in der Schüssel rühren, dann auf den abgekühlten Tarteboden glatt streichen, mit Klarsichtfolie abdecken, um die Bildung einer Haut zu vermeiden. Kühlen und fest werden lassen.

  • Gelatine mit 3 EL Wasser in eine Schüssel geben, stehen lassen bis sie schwammig geworden ist, dann die Schüssel mit der Gelatine über einem siedendem Wasserbad  auflösen. Gelatine unter den restlichen Pudding rühren, dann den Rum. Eiklar in eine saubere, fettfreie Schüssel steif schlagen, bis sich Spitzen bilden, den  restlichen Zucker dabei einrieseln lassen. Das Eiweiß gleichmäßig in den Rum-Pudding vorsichtig unterheben.

  • Den Rum-Pudding auf die kaltgestellte Schokoladenschicht-Mischung  mit einem Spatel glatt streichen. Den Kuchen im Kühlschrank kalt stellen, bis die obere Schicht fest geworden ist. Den Kuchen aus der Form entfernen und auf einem Teller anrichten. Die Sahne steif schlagen, über den Kuchen verteilen und mit Schokospänen schmücken.
