Apple Carrot Cake

It was time to fill our small refrigerator with food. Just 1km of us, is a Tesco supermarket.  While grocery shopping at home tends to be a chore, I adore grocery shopping in Ireland.  It’s likely the difference in selection that has me excited. The bakery counter has fabulous items. It’s also difficult to buy nothing !
My plan today were simple…  I wanted to bake something with apple. Hungry, I was on the way home, to start baking the cake. So easy to make and tasty straight from the oven. Still oven warm, I enjoyed my fresh baked Apple Carrot Cake!

But before I could get to home, I had to wait on traffic.
Aber bevor ich nach Hause kommen konnte, musste ich auf den Verkehr warten.

Apple Carrot Cake

Preparation time approx. 90 Min

Ingredients for about 15 pieces
Fat and breadcrumbs for the mold
150 g carrots
1 apple (about 150 g; eg Elstar.)
2 tablespoons lemon juice
175 g soft + 25 g soft butter
200 g sugar
salt
1/2 teaspoon ground cinnamon

3 eggs (Size.M)
250 g flour
50 g cornstarch
2 tsp baking powder
175g double cream
60 g icing sugar
1/8 litre of milk
Aluminium foil

  
  • Fat a high bundt cake (about 1.7 litres, about 12 cm high, 13.5 cm diameter) and sprinkle with breadcrumbs. Preheat the oven (electric oven: 175 ° C / recirculation: 150 ° C / Gas: s manufacturer.).
  • Peel, wash the carrots or the dough and finely grate. Peel the apple and cut  into quarters, remove seeds and grate well. Immediately sprinkle with lemon juice and mix with carrots. 175 g butter, sugar, 1 pinch of salt and cinnamon stir about 5 minutes creamy with the whisk of the hand mixer. Stir eggs one by one, than flour, starch and baking powder. Stir briefly. Fold in carrots and apple.
  • Give the dough into the mould and smooth. Bake in the hot oven for 45-55 minutes while slightly cover with aluminium foil after about 35 minutes. Allow to cool and remove afyer about 10 minutes. Plunge gently out of the mould, let it cool down.
  • For the cream cheese frosting, icing sugar 25 g butter and stir about 5 minutes straight with the whisk of the hand mixer. Give Milk in little by little with stirring. Spread frosting on the cake. Chill for ca.30 minutes.

Es war an der Zeit unseren kleinen Kühlschrank mit Lebensmitteln zu füllen. Nur 1km von uns ist ein Tesco-Supermarkt.
Für viele ist es eine lästige Pflicht einzukaufen, ich liebe es die irischen Lebensmittel zu kaufen.
Es ist wahrscheinlich der Unterschied in der Auswahl, die mich begeistern. Die Tesco Bäckereitheke hat eine fantastische Auswahl in verschiedenen Geschmacksrichtungen. Es ist schwer, nichts zu kaufen!
Mein Plan heute war einfach ... ich wollte etwas mit Apfel backen. Hungrig machte ich mich auf den Weg nach Hause um ein Kuchen zu backen. Er war so einfach zu machen. Frisch aus dem Ofen habe ich dann meinen gebackenen Apfelkarottenkuchen genossen!






                                  Apple Carrot Cake
 

Zubereitung in 90 Minuten

Zutaten für ca. 15 Stücke
Fett und Paniermehl für die Form
150 g Möhren
1 Apfel (ca. 150 g; z. B. Elstar)
2 EL Zitronensaft
175 g weiche + 25 g weiche Butter
200 g Zucker
Salz
1⁄2 TL gemahlener Zimt

3 Eier (Gr. M)
250 g Mehl
50 g Speisestärke
2 TL Backpulver
175 g Doppelrahmfrischkäse
60 g Puderzucker
1⁄8 l Milch
Alufolie

  • Eine hohe Gugelhupfform (ca. 1,7 l Inhalt; ca. 12 cm hoch, 13,5 cm Ø) fetten und mit Paniermehl ausstreuen. Backofen vorheizen (E-Herd: 175°C/Umluft: 150°C/Gas: s. Hersteller).
  • Für den Teig Möhren schälen, waschen und fein raspeln. Apfel schälen, vierteln, entkernen und ebenso raspeln. Sofort mit Zitronensaft beträufeln und mit Möhren mischen. 175 g Butter, Zucker, 1 Prise Salz und Zimt mit den Schneebesen des Rührgeräts ca. 5 Minuten cremig rühren. Eier nacheinander unterrühren. Mehl, Stärke und Backpulver mischen. Kurz unterrühren. Möhren und Apfel unterheben.
  • Teig in die Form geben und glatt streichen. Im heißen Backofen 45–55 Minuten backen, dabei evtl. nach ca. 35 Minuten mit Alufolie zudecken. Herausnehmen und ca. 10 Minuten abkühlen lassen. Vorsichtig aus der Form stürzen, auskühlen lassen.
  • Für das Frosting Frischkäse, 25 g Butter und Puderzucker mit den Schneebesen des Rührgeräts ca. 5 Minuten glatt rühren. Milch nach und nach unterrühren. Frosting auf dem Kuchen verteilen. Mind. 30 Minuten kalt stellen.
