Pork Chops with Apple Sauce / Schweinekoteletts mit Apfel-Sauce


Schweinekoteletts mit Apfel-Sauce

Bei diesem schönen irischen Sommerwetter den wir hier zurzeit haben, möchte ich natürlich nicht lange in der Küche stehen.  Diese leckeren, zarten Koteletts sind mit einer süßen-scharfen, Apfel-Sauce genau das richtige. Sie sind in kürzester Zeit auf dem Tisch.

Zutaten für 4 Personen
4 Schweinefleisch Rippe Koteletts auf den Knochen, die jeweils etwa
3cm / 1 ¼ Zoll dick, bei Raumtemperatur
1 ½ EL Sonnenblumenöl oder Rapsöl
Salz und Pfeffer

Apfel-Sauce
300g Kochäpfel, geschält, entkernt und gewürfelt
1 Zwiebel
1 Zehe Knoblauch
1 kleine Chili
1 EL Zucker, plus extra, falls erforderlich
fein geriebene Schale von ½ Zitrone
½ EL Zitronensaft, plus extra benötigt
100ml Brühe Wasser
¼ TL gemahlener Zimt
Butter

Zubereitung 
Den Backofen auf 200 ° C  vorheizen.
Für die Apfel-Sauce, die gewürfelte Zwiebel , Knoblauch, Chili  und die Äpfel in einer Pfanne anschwitzen dann Zucker, Zitronenschale, Zitronensaft und Brühe in die Pfanne geben und bei starker Hitze köcheln lassen. Temperatur zurück schalten, Deckel auf die Pfanne und  15-20 Minuten köcheln, bis die Äpfel weich sind.
Nun Zimt und Butter zu den Äpfeln zufügen und unterrühren. Mit Zitronensaft und Zucker abschmecken. Topf vom Herd nehmen, abdecken und die Apfel-Sauce warm halten.

Inzwischen die Koteletts leicht klopfen und trocken tupfen, mit Salz und Pfeffer würzen. Öl in einer großen Pfanne erhitzen und die Koteletts für 3 Minuten auf jeder Seite braten.
Die Pfanne in den Ofen  stellen  und für  weitere 7-9 Minuten braten.
Pfanne aus dem Ofen nehmen und  mit Alufolie abgedeckt 3 Minuten stehen lassen. Falls erforderlich – die Apfel-Sauce nochmals leicht erwärmen.
Die Koteletts auf vorgewärmten Tellern anrichten ein Esslöffel von dem Bratensaft über die Koteletts gießen und mit der Apfel-Sauce servieren.

Pork Chops with Apple Sauce



At this beautiful Irish summer weather, I of course do not want to stand long in the kitchen. These delicious, tender chops are just right with a sweet and spicy apple sauce. And they are on the table in a short time.


Ingredients servis 4

4 pork rib chops on the bone, each about
3cm / 1 ¼ inches thick, at room temperature
1 ½ tbsp sunflower oil or rapeseed oil
salt and pepper



Apple Sauce

300g cooking apples, such as Bramley, peeled, cored and diced
1 onion
1 clove of garlic

1 little Chilli
4 tbsp caster sugar, plus extra, if needed
finely grated zest of ½ lemon
½ tbsp lemon juice, plus extra needed
100 ml stock
1 tbsp water
¼ tsp ground cinnamon
knob of butter


Preheat the oven to 200°C / 400°F/Gas Mar 6.
To make the apple sauce, put the diced onions, garlic, chilli and apples in a fry pan and fry glassy, then sugar, lemon zest, lemon juice and stock into a heavy-based saucepan over a high heat and bring to the sugar. Reduce the heat to low, cover and simmer for 15-20 minutes, until the apples are smooth and fall apart when you mash them against the side of the pan. Stir in the cinnamon and butter and beat the apples until they are as smooth or chunky as you like. Stir in extra sugar or lemon juice, to taste. Remove the pan from the heat, cover and keep the apple sauce warm.
Meanwhile, pat the chops dry and season to taste with salt and pepper. Heat the oil in a large ovenproof frying pan over a medium-high heat. Add the chops and fry for 3 minutes on each side to brown.
Transfer the pan to the oven roast the chops for 7-9 minutes until cooked through and the juices run clear when you cut the chops. Remove the pan from the oven, cover with foil and leave to stand for 3 minutes. Gently reheat the apple sauce, if necessary.
Transfer the chops to warmed plates and spoon over the pan juices. Serve immediately, accompanied by the apple sauce.
