GRANDMA’S CAKE / OMAS KUCHEN



This traditional cake, which is filled with custard, is a Tuscan favourite known as Torta della Nonna. As with most Italian classics, everyone’s nonna (or grandma) has their own secret recipe… but here’s mine!


GRANDMA’S CAKE

Ingredients
For the pastry
200g (7oz) plain flour, plus extra to dust
⅔tsp baking powder
75g (3oz) unsalted butter, chilled and chopped
75g (3oz) caster sugar
Finely grated zest of ½ lemon
1tsp vanilla extract
1 medium egg

For the filling
350ml (12fl oz) semi-skimmed milk
Finely grated zest of ½ lemon
2 medium eggs
100g (3½oz) caster sugar
1tsp vanilla extract (or vanilla bean paste, if you have it)
25g (1oz) plain flour

For the topping
25g (1oz) pinenuts
Icing sugar, to dust




  • Start by making the pastry: put all the pastry ingredients into a food processor and pulse until the mixture comes together. If you don’t have a processor, mix together the flour and baking powder, then rub in the butter with your fingers. Next, stir in the sugar and zest, then mix in the vanilla and whole egg with a blunt-ended kitchen knife and bring the pastry together. Wrap and chill for 30min.
  • Next, make the filling. Heat the milk and lemon zest until nearly boiling (there should be bubbles around the inside edge of the pan). Meanwhile, put the two eggs, caster sugar, vanilla extract or paste and flour into a medium heatproof bowl. Whisk together to combine. Gradually whisk in the hot milk mixture, then scrape contents back into the empty pan. Return pan to the heat and cook, whisking constantly, until the mixture is thick (it will need to boil before it thickens). Take off heat and leave to cool completely.
  • Preheat oven to 180°C (160°C fan) mark 4. Lightly flour a work surface and roll out two-thirds of the pastry and use to line a deep, 20.5cm (8in) round loose-bottomed sandwich tin. Whisk the filling to break it up (and beat out any lumps that have formed on cooling), then spoon into the pastry base and spread to level. Trim the lining pastry (if necessary) so it comes about 2cm (¾in) above the filling, then gently fold the pastry on to the filling. Next, roll out the remaining pastry on a lightly-floured surface and cut out a 20.5cm (8in) round. Lay on top of the filling and press edges lightly to seal. Sprinkle over the pinenuts and press them down gently.
  • Bake for 50min until nicely golden. Leave to cool for 10min in tin, then carefully remove outside ring and leave tart to cool completely on a wire rack.
  • To serve, liberally dust the cake with icing sugar and serve in slices with berries, or (if you’re feeling extra indulgent) some pouring cream.

Dieser traditionelle Kuchen der mit Vanillepudding gefüllt ist, ist in der Toskana als  Lieblings Torta della Nonna bekannt. Wie bei den meisten italienischen Klassikern, jeder Nonna (oder Oma) hat ihr eigenes Geheimrezept ... aber hier ist meins!

OMAS KUCHEN

Zutaten
Für den Teig
200g Mehl, plus extra zu bestäuben
TL Backpulver
75g ungesalzene Butter, gekühlt und gehackt
75g Zucker
Fein geriebene Schale von ½ Zitrone
1 TL Vanille-Extrakt
1 mittelgroße Ei


Für die Füllung
350ml Magermilch
Fein geriebene Schale von ½ Zitrone
2 mittelgroße Eier
100g Zucker
1 TL Vanille-Extrakt (oder Vanillebohnenpaste, wenn Sie es haben)
25g Mehl


Für den Belag
25g Pinienkernen
Puderzucker, um Staub

  • Für den Teig alle Zutaten in einer Küchenmaschine zusammen verrühren. Wenn Ihr keine Küchenmaschine habt, mischt Ihr das Mehl mit dem Backpulver, dann die Butter mit den Fingern in das Mehl reiben. Weiter rühren, den Zucker und die Zitronenschale, dann Vanille und ein ganzes Ei in den Teig zusammen rühren oder kneten. Eingewickelt für 30min ruhen lassen.
  • Als nächstes kommt die Füllung. Die Milch und Zitronenschale erhitzen, bis es fast kocht (es sollten Blasen um den inneren Rand der Pfanne sein). In der Zwischenzeit die zwei Eier, Zucker, Vanille -Extrakt oder Paste und Mehl in eine hitzebeständige Schüssel alles zusammen verrühren. Nach und nach in der heißen Milch-Mischung verquirlen, dann den Inhalt zurück in den leeren Topf geben, aufkochen, aber dabei ständig Rühren bis die Mischung dick wird (es muss kochen, bevor es dick wird). Vom Herd nehmen und vollständig abkühlen lassen. Die Füllung immer wieder mal umrühren (damit sich keine Haut beim Abkühlen gebildet oder Glassichtfolie auf die Füllung legen).
  • Ofen auf 180°C (160°C Umluft) vorheizen. Arbeitsfläche leicht mit Mehl bestäuben, den Teig in zwei Hälften teilen, eine Hälfte zu einem 20,5cm runden Boden ausrollen und in eine eingefettete 18cm Springform drücken, so dass ein etwa 2cm Rand überragt. Die Füllung vorsichtig auf dem Teigboden füllen.
  • Der restlichen Teig auch wieder auf einer leicht bemehlten Fläche, rund zu einem 20,5cm ausrollen und auf die Füllung legen. Die Kanten leicht andrücken. Die Pinienkerne darüber streuen und diese vorsichtig in den Teig andrücken. 
  • Für 50 Minuten golden backen.10 Minuten in der Form abkühlen lassen, dann vorsichtig den Außenring entfernen und die Torte vollständig auf einem Kuchengitter abkühlen lassen.
  • Zum Servieren den Kuchen mit reichlich Puderzucker bestäuben und  in Stücke mit Beeren, oder (wenn Ihr das Gefühl habt zusätzliche noch mit) etwas Sahne servieren.
