Knusprige Kartoffelbällchen mit Thunfisch an Knoblauch-Kräuter-Mayonnaise
1 EL Speisestärke
1 weiße Zwiebel
einige Stängel glatte Petersilie
1 Dose Thunfisch (150 g)
75 g frisch geriebener Parmesan
Hartweizengrieß zum Wälzen
Olivenöl zum Frittieren
Crispy potato balls with tuna and garlic-herb-mayonnaise
Serves four to six people
500 g of freshly boiled potatoes
1 tablespoon cornstarch
1 white onion
2-3 cloves of garlic
few sprigs of parsley
1 can of tuna (150 g)
75 g freshly grated Parmesan cheese
some paprika powder
grated lemon rind
Durum wheat semolina for tumbling
Olive oil for frying
Finely dice the onion and garlic , finely chop parsley , tuna ( drain the oil before) picking apart . Knead together with the Parmesan cheese and egg in the potato mixture . Let it rest and swell a quarter of an hour . Strong taste , then parting with one teaspoon portions and form balls between the palms damp . In durum wheat semolina turn until they are completely covered it.
In hot olive oil - preferably in a wok - floating fry golden. Drain on paper towels several times gelegtem . Serve warm as an aperitif .
As a supplement to, there are a garlic-herb-mayonnaise, olive oil, of course, which is really made in a jiffy :
Add 1 tablespoon mustard in a tall mixing glass , an egg yolks , salt , pepper, lemon juice , two cloves of garlic and a red chilli deseeded and a handful of herbs to taste - tastes wonderful as basil . Then about 120 milliliters of olive oil top up . With the blender once and on - leave - that is a dense , wonderfully creamy sauce. If it is too thick , you can dilute it with a little broth .
The garlic and herb mayonnaise is made quickly and tastes fantastic with the potato balls.
