Bramley Apple Cider Tart / Bramley Apfelweintarte



BRAMLEY APPLE AND CIDER TART

Makes 1 tart 26cm / 10½ inches
Preparation time: 45 minutes, plus cooling
Cooking time: 35 minutes

Pastry
300g (10 ½ oz) plain flour, plus extra
For dusting 1 tsp baking powder
100g (3 ½ oz) butter, plus extra for greasing
150 g (5 ½ oz) low-fat curd cheese or quark
100ml (3 1/2fl oz) milk
80g (2 3/4oz) caster sugar
1 tsp vanilla sugar
Pinch of salt

Filling
1 sachet vanilla blancmange powder
2 eggs, separated
350ml (12 fl oz) milk
100g (3 ½ oz) caster sugar
150ml (5 fl oz) cider
Pinch of salt
500g Bramley apples or Golden Delicious apples
Juice of 1/2 lemon
Whipped cream, to serve (optional)

  • Preheat the oven to 180°C/350°F/Gas Mark 4. Grease a 26-cm (10 1/2-inch) round tart tin.
  • To make the pastry, sift together the flour and the baking powder Melt the butter in a saucepan. Put the flour mixture into the bowl of a food mixer with the curd cheese, milk, butter, caster sugar, vanilla sugar and salt and mix to a smooth dough. Roll out the pastry on a work surface lightly dusted with flour to a round slightly larger than the tin. Line the prepared tin with the pastry, turning up the edge.
  • To make the filling, mix the blancmange powder with the egg yolks and 4 tablespoons of the milk. Pour the remaining milk into' a saucepan with 80g/2 ¾ oz of the sugar and bring to the boil. Pour in the blancmange powder mixture, stirring, and bring back to the boil. Add the cider and bring back to the boil. Transfer the mixture to a bowl, cover with clingfilm and leave to cool in the refrigerator until lukewarm.
  • Meanwhile, whisk the egg whites with the salt until they hold s peaks, then fold into the lukewarm blancmange mixture. Spread the mixture over the pastry and level the surface.
  • Peel, core and quarter the apples and cut them into thin slices Mix the apple slices with the remaining sugar and the lemon juice then arrange on top of the blancmange mixture in a circular pattern.
  • Bake in the preheated oven for about 35 minutes until golden yellow. Leave to cool before serving with whipped cream, if using.

BRAMLEY APFEWEIN TARTE

Für eine 26cm Tarteform
Zubereitungszeit: 45 Minuten, plus Kühlen
Backzeit: 35 Minuten

Teig
300g Mehl, plus extra
Zum Bestäuben 1 TL Backpulver
100g Butter, plus extra zum Einfetten
150g fettarmen Frischkäse oder Quark
100ml Milch
80g Zucker
1 TL Vanillezucker
Prise Salz

Füllung
1 Päckchen Vanillepuddingpulver
2 Eier, getrennt
350ml Milch
100g Zucker
150ml Apfelwein
Prise Salz
500g Bramley Äpfel
oder Golden Delicious
Saft von ½  Zitrone
Schlagsahne, zum servieren (optional
)


  • Den Backofen auf 180°C (160°C Umluft) vorheizen. Eine 26cm runde Tarteform einfetten.

  • Um den Teig zu machen, das Mehl und das Backpulver in eine Schüssel sieben. Das Mehl-Gemisch mit dem Quark, Milch, Butter, Zucker, Vanillezucker und Salz mischen, bis es ein glatter Teig ist. Den Teig auf einer leicht bemehlten Arbeitsfläche Rund auseollen, etwas größer als die Form. Den Teig in die vorbereitete Form drücken.
  • Für die Füllung, das Puddingpulver mit dem Eigelb und 4 Esslöffel Milch verrühren. Die restliche Milch in einem Topf mit 80g Zucker gießen und zum Kochen bringen. Die Puddingpulver-Mischung in die Milch einrühren und wieder zum Kochen bringen. Dann den Apfelwein zufügen und wieder zum Kochen zu bringen. Mit Frischhaltefolie abdecken und abkühlen lassen bis die Mischung lauwarm ist.
  • Inzwischen, das Eiweiß mit Salz steif schlagen. Den Eischaum in die lauwarme Pudding-Mischung unterheben und in die Tarteform verteilen.
  • Die Äpfel schälen, entkernen und vierteln, dann in dünne Scheiben schneiden. Die Apfelscheiben mit dem restlichen Zucker und dem Zitronensaft vermengen und auf die Puddingmischung in kreisförmigen Muster draufsetzen.

  • Im vorgeheizten Ofen etwa 35 Minuten goldgelb backen. Mit Schlagsahne servieren.
