Classic Seedy Cake

Seed Kuchen ist ein traditioneller britischer Kuchen, gewürzt mit Kümmel oder anderen schmackhaften Samen. Dieser Kuchen ist auch populär in Irland und Wales.
Ich sah das Rezept für Seedy Cake in einem gebrauchten Buchhandel und konnte es kaum erwarten den Kuchen nachzubacken.
Der Seedy Kuchen sollte ein oder zwei Tage vorher gebacken werden, damit der Kümmel seine Chance bekommt  sich zu entfalten, serviert wird der Kuchen in dünne Scheiben.
Ich habe den Kuchen in einer Plastiktüte im Kühlschrank aufbewahrt so war es sehr einfach ihn in dünne Scheiben zu schneiden.
So jetzt aber genug, hier sind die Zutaten für einen schönen Irish Tee Kuchen.  

     ZUTATEN         
225g weiche Butter
225g Zucker
4 Eier
225g Mehl mit Backpulver
1 TL Kümmel
Für die Zuckerglasur
250g Mascarpone
100g Puderzucker
Saft von 1 Zitrone 


ZUBEREITUNG
Backofen auf 180°C Umluft vorheizen. Eine Kastenform einfetten.
Butter mit dem Zucker schaumig schlagen nach einander die Eier unterschlagen.
Mehl und Backpulver unterrühren und gut verrühren. Kümmel oder andere Samen unter den Teig heben. Teig in die vorbereitete Kastenform gießen und im vorgeheizten Backofen für 45 Minuten backen (Stäbchenprobe).
Den Kuchen in der Form etwas abkühlen lassen, dann auf ein Kuchengitter stürzen und vollständig erkalten lassen.

Für den Zuckerguss alle Zutaten vermengen und auf der Oberseite des Kuchens gießen, mit etwas Zitronenzesten dekorieren.

Classic Seedy Cake


Seed cake is a traditional British cake flavoured with caraway or other flavourful seeds. This cake is also known to popular in Ireland and Wales.
I saw the recipe for Seedy Cake in an book store and I couldn't wait to try it.
The Seedy Cake should be made a day or two ahead of time so that it can mellow, firm up, and give the caraway seeds a chance to meld with the cake and he Tea cakes should be served as dainty slices.
I put it in a plastic bag in the refrigerator, and it was very easy to slice thinly once it had chilled thoroughly.
So now, without any further ado, here are the makings for a nice Irish tea cake.

Ingredients
225g softened butter
225g caster sugar
4 eggs
225g self raising flour
1tsp caraway seeds

Preheat oven to 180 degrees and grease/line a loaf tin.
Mix the butter and caster sugar until fluffy. Add one egg at a time and mix well.
Sieve in the self raising flour and mix fully.
Add in the caraway seeds and give one final mix.
Pour into the loaf tin and bake in the preheated oven for 45 mins or until a skewer comes out clean.
Allow to cool slightly before turning out onto a wire rack.

For the lime icing:
250g mascarpone cheese
100g icing sugar
Juice of 2 limes

Mix all the ingredients together before spreading on top of cake.
Sprinkle some lime zest on top.
