Apple black pudding strudel / Apfel-Blutwurst Strudel


The warm processing takes the black pudding their greasy heaviness. Delicious it is but only if the base product is top notch. There is  black pudding, which is extended with soy or egg white powder. Apple black pudding strudel
Ingredients for 4 people

Ingredients for the strudel dough:
200 g flour
30 ml peanut oil
2.5 g salt
125 ml of lukewarm water
1 egg

The ingredients for the filling:

500 g potatoes
500 g apples
200 g streaky bacon
300 g black pudding
50 ml peanut oil
½ bunch of chives
½ bunch of thyme
500 g Quark
Chives, parsley
hot paprika
1 shot of single cream


  • Dissolve salt in lukewarm water , process the flour and oil to make a soft dough. This is only possible if it is kneaded thoroughly with your hands. The kneaded dough into a dumpling shape, let it rest for 1 hour brush with oil and covered on a floured sheet at least.
  • Then take off on a large floured cloth over the back of the hand, very thin. It is said that you have to look through a strudel dough through, so thin it should be. This requires a lot of work and a lot of dexterity.. Pavers strudel dough from the supermarket is only second choice. But if it is made without many additives, it can be a quick alternative. Die warme Verarbeitung nimmt der Blutwurst ihre fettige Schwere. Lecker wird es allerdings nur, wenn das Grundprodukt erstklassig ist. Es gibt Blutwurst, die mit Soja oder Eiweißpulver gestreckt wird. Je mehr Zusatzstoffe auf dem Etikett stehen, desto schlechter. Glutamat, Würze, Hefeextrakt und solche Stoffe gehören nicht in eine Blutwurst.
Die beste Blutwurst gibt es wahrscheinlich beim Metzger um die Ecke, der seine Wurst noch selber macht. Sie sollte nicht zu fettig sein - und nicht luftgetrocknet, Sonst ist sie zum Verarbeiten zu fest. Ob die Blutwurst aus dem Darm kommt oder aus der Dose - das ist egal.

Apfel-Blutwurst-Strudel

Zutaten für 4 Personen

Zutaten für den Strudel:
200 g Mehl
30 ml Erdnussöl
2,5 g Salz
125 ml lauwarmes Wasser
1 Ei
Die Zutaten für die Füllung:
500 g Kartoffeln
500 g Äpfel
200 g durchwachsener Speck
300 g Blutwurst
50 ml Erdnuss-Öl
½  Bund Schnittlauch
½  Bund Thymian
500 g Quark
Schnittlauch, Petersilie
scharfes Paprikapulver
1 Schuss flüssige Sahne

  • Das Salz in lauwarmes Wasser auflösen, mit dem Mehl und dem Öl zu einem weichen Teig verarbeiten. Das geht nur, wenn mit den Händen gründlich geknetet wird. Den gekneteten Teig zu einem Kloss formen, mit Öl bestreichen und auf einem bemehlten Blech abgedeckt wenigstens 1 Stunde ruhen lassen.
  • Dann auf einem großen bemehlten Tuch über die Handrücken ausziehen, ganz dünn. Man sagt, dass man durch einen Strudelteig hindurch schauen muss, so dünn soll er sein. Das erfordert viel Arbeit und eine Menge Fingerspitzengefühl. Fertiger Strudelteig aus dem Supermarkt ist nur zweite Wahl. Aber wenn er ohne viele Zusatzstoffe hergestellt wird, kann er eine schnelle Alternative sein. Wichtig ist: Dünn ausgerollt muss er sein.
  • Jetzt geht es an die Füllung: Die rohen Kartoffeln würfeln, den Speck in Streifen schneiden, Apfel und Blutwurst ebenfalls würfeln. Das Öl in eine Pfanne geben, und darin diese Zutaten 10 Minuten anschwitzen. Pfeffern und Salzen, mit Schnittlauch und dem fein gerupften Thymian bestreuen. Vom Feuer nehmen, damit die Füllung etwas auskühlen kann. Sie darf nicht mehr zu heiß sein - sonst quillt der Teig auf, wenn wir jetzt die Masse darauf verteilen, schön gleichmäßig.
  • Vorsichtig einrollen, immer fest andrücken und immer wieder darauf achten, dass alles schön anliegt. Auf ein leicht geöltes Backblech legen. Ein Ei in einer Tasse mit etwas Wasser verrühren und diese Mischung mit einem Pinsel auf dem Strudel verstreichen. Nun brauchen wir noch einen kleinen Trick, damit der Strudel perfekt wird. Wenn wir den Strudel jetzt im Ofen garen, entsteht Wasserdampf, der den Teig von innen aufweicht oder Löcher in den Teig reißt. Damit der Wasserdampf abziehen kann, stechen wir mit einem Zahnstocher oder einem anderen Gegenstand kleine Löcher in die Oberfläche des Strudels.
  • Während der Strudel bei 180 Grad im Ofen eine knappe halbe Stunde gart und leicht braun wird, können wir die Beilage herstellen. Der Kräuterquark ist schnell gemacht. Den abgetropften Quark mit einem Schuss Sahne verrühren. Schnittlauch und Petersilie ganz fein schneiden, mit Pfeffer, Salz und Paprika abschmecken, fertig.
  • Wenn der Strudel fertig ist, aus dem Ofen nehmen und einige Minuten ruhen lassen. Dann schräg aufschneiden und mit dem Kräuterquark servieren. Als Beilage ist frischer Blattsalat perfekt!
           Übrigens: Der Strudel schmeckt auch kalt perfekt!
