Feine Sachertorte

HAPPY BIRTHDAY! Heute hat mein Schatz Geburtstag. Mit seiner Lieblingstorte wollte ich die Augen meines Mannes mal wieder so richtig zum Glänzen bringen.

Feine Sachertorte
Zutaten für eine 18cm Springform
100g Zartbitterschokolade
4 Eier
75g Butter
75g Zucker
1 ½ TL Vanillezucker
1 Prise Salz
75g Mehl
½ TL Backpulver
1 ½ EL + 20g Puderzucker
100g Marzipan-Rohmasse
170g Aprikosen-Konfitüre
Für die Glasur (Ganache)
100g Vollmilch-Schokolade
100g Zartbitter-Schokolade
100ml Sahne
1 EL Butter


Und so wird’s gemacht:
Schokolade hacken und auf einem heißen Wasserbad schmelzen. Abkühlen lassen.
Eier trennen. Butter mit Zucker, Vanillezucker und Salz cremig rühren. Ei-gelb einzeln unterrühren. Schokolade unterrühren. Mehl mit Backpulver mischen, kurz unterrühren. Eiweiß steif schlagen, dabei den Puderzucker einrieseln lassen. Eischnee unter den Teig heben.
Den Boden einer 18cm Springform mit Backpapier auslegen. Teig darin glatt streichen. Im vorgeheizten Backofen bei 175°C (Umluft: 150°C) 50-60 Minuten backen. Eventuell nach ca.40 Minuten abdecken. Auf einem Kuchengitter auskühlen lassen.
Arbeitsfläche mit 20g Puderzucker bestreuen. Marzipan damit verkneten und ausrollen. Mit Hilfe des Springformrandes 22cm einen Kreis ausschneiden.
Konfitüre erwärmen und durch ein Sieb streichen. Boden waagerecht halbieren. 2/3 der Konfitüre auf den unteren Boden streichen. Mit dem zweiten Boden bedecken und mit der restlichen Konfitüre bestreichen auch am Rand.
Marzipan darauf setzen und glatt streichen.
Um die Schokoladenglasur (Ganache) zu machen, legen ihr die gehackte Schokolade in eine mittelgroße Schüssel aus Edelstahl und stellt es Beiseite. Erhitzt die Sahne und Butter in einem mittelgroßen Topf bei mittlerer Hitze. Dann die Sahne sofort über der Schokolade gießen und für 5 Minuten stehen lassen. Nach den 5 Minuten mit einem Schneebesen glatt rühren. bis die Ganache schön cremig ist. An einem kühlen Ort aber nicht im Kühlschrank über Nacht stehen lassen.
Am nächsten Tag die Ganache noch einmal kurz mit einem Löffel umrühren und den Kuchen mit einer Winkelplatte überziehen bis die Torte glatt und gerade ist. An einem kühlen Ort trocknen lassen.

Sachertorte



The Sacher Torte is one of the most well-known specialties of Vienna, Austria. It is a chocolate cake made with a layer of apricot marmelade and chocolate frosting (ganache).
History
The cake dates back to 1832. The story goes that the Austrian State Chancellor, Prince Metternich, requested a bakery to create a special dessert which he was going to offer to guests. Metternich was hoping to sway his guests in favor of his political plans and wanted a new dessert to help him. Unfortunately, the owner of the bakery was home, sick in bed, on this day. But Metternich insisted that he couldn't wait for the owner to return. So, Franz Sacher, a 16-year old student-baker interning at the bakery, experimented with different chocolates and cakes, and eventually came up with the Sachertorte. Metternich was very pleased and a new tradition was created.

Ingredients for a 18cm spring form
100g dark chocolate
4 eggs
75g butter
75g sugar
1 ½ tsp vanilla sugar
1 pinch of salt
75g flour
½ tsp baking powder
1 ½ tbsp = 20 gr. icing sugar
100g Marzipan
170g apricot jam
For the icing (ganache)
100g milk chocolate
100g dark chocolate
100ml cream
1 tablespoon butter


And so it's done:
Chop chocolate and melt in a hot water bath. Let cool.
Separate the eggs. Beat butter with sugar, vanilla sugar and salt until creamy. Stir in egg yolk separately. Stir in chocolate. Mix flour with baking powder, stir briefly. Beat egg whites until stiff, leaving sprinkle in the icing sugar. Fold egg whites into the batter .
Line the bottom of a 18cm springform pan with baking paper. Fill the dough in and  smoothen. Bake in a preheated oven at 175 ° C (fan 150 ° C) for 50-60 minutes. Possibly cover for about 40 minutes. Cool on a wire rack.
Sprinkle work surface with icing sugar 20g. Knead the marzipan and roll out. With the help of the spring form rim cut a min. 22cm circle.
Heat jam and press through a sieve. Halving the cake horizontally and spread 2/3 of the jam on the base floor. Cover with the other half and sprinkle with the remaining jam also on the edge around the cake. Then cover the cake with  the marzipan circle and smoothen.

To make the chocolate icing (ganache), place the chopped chocolate in a medium sized stainless steel bowl and put it aside. Heat the cream and butter in a medium saucepan over medium heat. Then immediately pour the cream over the chocolate and let stand for 5 minutes.
After 5 minutes stir with a whisk until  the ganache is smooth and creamy. place at a cool place [but do not let stand in refrigerator ! ] overnight.
The next day, stir the ganache briefly with a spoon and cover the cake with the ganache smoothen with an pallet till planar. Leave to dry in a cool place.
