Matcha Chiffon Cake

I have this cake for a long time on my baking wish list, because I can get neither the form nor the Matcha tea here in Ireland, I always pushed this recipe back for later . But my dear good friend from
Beat egg whites with potassium bitartrate* and 30 gr sugar until smooth firm (not fully stiff!)
*This is used to stabilizing egg whites, increasing their heat tolerance and volume. I took 30 gr Royal Icing sugar what is much easier and leads to the same result ! Could be you need a wee bit more or less; this depends on the egg white.
Now mix the batter with a whisk until it is homogeneous.
