Apple stuffed with black pudding, mashed potatoes and roasted onions / Gefüllter Apfel mit Blutwurst, Stampfkartoffeln und Schmelzzwiebeln



This dish is not your typical Irish recipe, I found it on “Hi Hessia” by Christian Kolb but I'm sure it would also taste the Irish, this delicious dish with black pudding!

Apple stuffed with black pudding, mashed potatoes and roasted onions

Ingredients for apples with black pudding
4 small apples
200 g black pudding
lemon juice
Salt and pepper (to taste)

Ingredients for mashed potato
500 g potatoes
100 g butter
Salt, pepper, nutmeg (to taste)

Ingredients for roasted onions
500 g onions
60 g oil
Salt and pepper (to taste)


 
  • Wash all apples and cut a lid. Scoop out a tiny knife and /or coffee spoon or melon ball spoon, also a so remove the core.
    Brush the apples with lemon juice and season the inside with salt and pepper. Dice the Black pudding and fill it into the apples. Then put the apples in an ovenproof dish and bake in preheated oven for about 15-30 minutes.

  • Peel the potatoes for the mashed potatoes and boil in salted water or cook over steam.
    Give butter in a pot and heat to cook as long until it begins to brown (brown butter). Season to taste the potatoes with a salt-pepper mixture, nutmeg and butter coarsely mash to a puree.

  • Peel the onions and cut in half, then cut into fine strips. Put the oil in a hot pan. Add onions and fry until the onion strips are golden fried.
    Stir occasionally so that all onions fry evenly. Season with salt and pepper.

Dieses Gericht ist kein typisches irisches Rezept, ich habe es gefunden bei hallo Hessen von Christian Kolb aber ich bin mir ganz sicher das auch den Iren dieses schmackhafte Gericht mit Blutwurst schmecken würde!

Gefüllter Apfel mit Blutwurst, Stampfkartoffeln und Schmelzzwiebeln

Zutaten für Äpfel mit Blutwurst
4 kleine Äpfel
200 g Blutwurst
Zitronensaft
Salz und Pfeffer (nach Geschmack)

Zutaten für Stampfkartoffel
500 g Kartoffeln
100 g Butter
Salz, Pfeffer, Muskat (nach Geschmack)

Zutaten für Schmelzwiebeln
500 g Zwiebeln
60 g Öl
Salz und Pfeffer (nach Geschmack)


  • Äpfel waschen; bei jedem Apfel einen Deckel abschneiden. Mit kleinem Messer und/oder Kaffeelöffel oder auch einem Kugelausstecher aushöhlen und damit das Kerngehäuse entfernen.
    Äpfel innen mit Zitronensaft bepinseln und mit Salz und Pfeffer würzen. Die Bluwurst zuschneiden und die Äpfel damit füllen. Dann die Äpfel in eine feuerfeste Form setzen und im vorgeheizten Ofen ca. 15-30 Minuten backen.

  • Für die Stampfkartoffeln Kartoffeln schälen und in Salzwasser kochen oder über Dampf garen.
    Butter in einem Topf so lange kochen, bis diese anfängt braun zu werden (Nussbutter). Die Kartoffeln mit der Salz-Pfeffermischung, Muskat und der Butter zu einem Püree grob zerstampfen.

  • Zwiebeln schälen und halbieren, dann in feine Streifen schneiden. Öl in die Pfanne geben und erhitzen. Zwiebeln zugeben und so lange anbraten, bis die Zwiebelstreifen goldgelb gebraten sind.
    Ab und zu umrühren, damit alle Zwiebeln gleichmäßig anbraten. Mit Salz und Pfeffer abschmecken.
