Sticky Orange Cake with Natural Yogurt Topping


Feuchter Orangenkuchen mit Natur Joghurt Topping


Die Zutaten machen diesen Kuchen einzigartig. Keine Butter und nur ganz wenig Mehl aber dafür mit einer ganzen gekochten Orange zubereitet, das verleiht diesem Kuchen eine feucht-klebrige dichte. Das Topping mit Joghurt, Granatapfel und frisch geriebener Orangenschale verleiht dem Kuchen sein letzten schliff.

Feuchter Orangekuchen
1 ganze frische Orangen
50ml von dem Kochwasser von den Orangen
3 ganze Eier aus Freilandhaltung
125g Zucker
50g Mehl
100g gemahlene Mandeln
1 TL Backpulver

Zubereitung
Orange waschen, in ein Topf legen, mit kaltem Wasser bedecken und zum Kochen bringen. Für 1 ½ Stunden köcheln lassen bis die Orange vollständig weich ist. Danach die Orange in der Kochflüssigkeit abkühlen lassen.

Backofen auf 150°C Umluft vorheizen. Eine 24cm x 9cm x 6.5cm Kastenform einfetten.

Die gekochte Orange (mit Schale) und 50ml der Kochflüssigkeit  in einer Küchenmaschine zu einem sehr glatten Püree pürieren.
Orangenpüree in eine Schüssel füllen und zusammen mit dem Zucker und den Eier vermengen. Mandeln unterheben. Das Mehl und Backpulver über den Teig sieben und mit einem Löffel aus Metall in den Teig unterrühren (der Teig ist sehr flüssig). 
Die Teigmischung in die vorbereitete Form füllen und auf der mittlere Schiene im vorgeheizten Backofen für 1 Stunde backen (Stäbchenprobe machen!).
Die Textur dieses Kuchens ist feucht und dicht, fast so wie bei einem gebackenen Käsekuchen. 


Natürliche Joghurt Topping
150g Naturjoghurt
10g Zucker
1 Blatt Gelatine
50ml Milch
1 Granatapfel, Samen
Schale einer Orange


Zubereitung
Gelatine im kalten Wasser einweichen.
Die Milch und Zucker zum Kochen bringen, Gelatine ausdrücken und zur der heißen Milch  hinzufügen, rühren bis sich die Gelatine aufgelöst hat. In einer mittelgroßen Schüssel den Naturjoghurt mit der Milch gut mischen. Die  Joghurt-Milch Mischung abkühlen lassen, dann auf den abgekühlten Kuchen verteilen. Granatapfel und Orangenschale über den Joghurt Topping streuen.
Dieser Kuchen hält bis zu drei Tagen im Kühlschrank und bleibt wunderbar feucht.

Sticky Orange Cake with Natural Yogurt Topping

The ingredients make this cake unique. Using whole boiled oranges gives this cake it’s sticky dense characteristic and ultimate orange punch. The yoghurt topping garnished with pomegranate seed, pistachio nuts and freshly grated orange zest complements the moist deliciousness of the cake.

Sticky Orange Cake
1 whole fresh oranges
50ml of the cooking water from the oranges
3 whole free range eggs
125g unrefined caster sugar
50g plain flour
100g ground almonds
1 tsp baking powder

Wash the oranges; place them in a saucepan and cover with cold water. Bring the oranges to the boil and simmer for approximately 1 ½ hours, until completely soft. Let the oranges cool completely in the cooking liquid.

Preheat the oven to 150°C and grease one 24cm x 9cm x 6.5cm loaf shape moulds.

Place the boiled oranges (skin and all) in a food processor with 50ml of the cooking liquid, puree till a very smooth.
Transfer the orange puree to a large mixing bowl, add the eggs and sugar and mix well. Fold the ground almonds into the batter. Sieve the flour and baking powder over the batter and fold the flour in with a metal spoon. The cake batter will be very runny.
Spoon the cake mixture in to the prepared moulds and place on the middle shelf of the preheated oven, bake for 1 hour. Test the cake by inserting a metal skewer; if it comes out clean the cake is cooked. The texture of this cake is moist and dense, nearly the texture of a baked cheesecake. Let the cake cool for 20 minute, turn the cake out on to a cooling rack and cool completely before you garnish the cake with the natural yoghurt topping.

Natural Yoghurt Topping
150g natural yoghurt
10g unrefined caster sugar
1 leaf of gelatine
50ml milk
1 pomegranate, seeds only
zest of one orange

Soak the gelatine in cold water.
Bring the milk and sugar to the boil. Squeeze the gelatine leaf to remove the water.

Add the soaked gelatine to the hot milk and stir to dissolve.
In a medium size mixing bowl mix the natural yoghurt and the milk, mix well. Let the yoghurt cool to a soft set before spreading the yoghurt topping onto the cold cakes.

Sprinkle the pomegranate seeds and orange zest over the yoghurt topping before it sets completely.

This cake keeps well and will remain moist. It will last for up to three days in the fridge.
