Rhubarb Meringue Cake / Rhabarber Baiser Kuchen


This recipe is for a very traditional German summer cake.
The rhubarb is baked in a sweet vanilla sponge and then topped with meringue for a bit of crunch and some extra sweetness. The recipe makes a 24cm round cake – it can easily be doubled for a larger square tin.


Rhubarb Meringue Cake

Preparation time in minutes: 30 minutes
Cooking time: 75 minutes
Ingredients for 12 serving (s)

Ingredients
For the dough:
200 g soft butter
200 g of sugar
3 egg yolks (medium)
3 tsp of vanilla sugar
1 pinch of salt
grated rind of 1/2 organic lemon
150 g of flour
50 g cornflour
1 tsp baking powder
50 g of whipped cream

For the topping:
500 g rhubarb

For the meringue:
3 fresh egg whites (M)
1 pinch of salt
150 g sugar
1 tsp cornflour


           
          And how it's done

  • Mix dough ingredients until smooth. Fill in and with baking paper lined spring form pan (24 cm diameter). Clean and wash the rhubarb, cut into 2 cm long pieces. Spread on dough, and presses a wee bit on. Bake in a preheated oven about 60 minutes (electric oven: 180°C, Gas: Stage 2, circulating air: 160°C).

  • For the meringue, beat the egg whites with salt until stiff. Sprinkle sugar gradually in, but, always continue to beat. Sieve Cornstarch over and fold loosely under. Distribute cloud-like the meringue on the cooled rhubarb pie. In the same heat bake another 15 minutes, till the meringue topping is slightly browned.

Der Rhabarber wird in einem süßen Vanille  Rührteig gebacken und dann mit Baiser gekrönt, der für ein bisschen Crunch und eine zusätzliche Süße sorgt. Das Rezept ist für eine runde 24cm Kuchen - es kann leicht für einen größere Form oder Backblech verdoppelt werden.

Zutaten für 12 Portionen         

                                 Zutaten
                             Für den Teig:
200 g weiche Butter
200 g Zucker
3 Eigelbe (M)
3 TL Vanillezucker
1 Prise Salz
geriebene Schale von 1⁄2 Bio-Zitrone
150 g Mehl
50 g Speisestärke
1 TL Backpulver
50 g Sahne

Für den Belag:
500 g Rhabarber

Für den Baiser:
3 frische Eiweiß (M)
1 Prise Salz
 150 g Zucker
1 TL Speisestärke

            

            Und so wird’s gemacht

  • Alle Teigzutaten glatt verrühren. In eine mit Backpapier belegte Springform (24 cm ø) füllen. Den Rhabarber putzen, waschen und in 2 cm lange Stücke schneiden. Auf dem Teig verteilen, dabei etwas andrücken. Im vorgeheizten Backofen ca.60 Minuten backen (E-Herd: 180 °C, Gas: Stufe 2, Umluft: 160 °C).

  • Für den Baiser das Eiweiß mit Salz steif schlagen. Zucker nach und nach einrieseln lassen, dabei immer weiterschlagen. Speisestärke darüber sieben und locker unterheben. Eiweiß wolkenartig auf den leicht abgekühlten Rhabarberkuchen verteilen. Bei gleicher Hitze weitere 15 Minuten backen, bis die Baiserhaube leicht Farbe angenommen hat.

CREAM CHEESE POUND CAKE / CREMIGER FRISCHKÄSE KASTENKUCHEN



CREAM CHEESE POUND CAKE

Serves 16
  
Ingredients
340g butter, softened
1 package (8 ounces) cream cheese, softened
250g sugar
6 eggs
2 teaspoons vanilla extract
1 teaspoon lemon extract
360g all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt

Confectioners' sugar, fresh berries and whipped cream, optional


  • In a large bowl, cream the butter, cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extracts. Combine the flour, baking powder and salt; beat into creamed mixture until blended.
  • Pour into a greased and floured 10-in. fluted tube pan. Bake at 170°C (150°C fan) for 1-1/4 to 1-1/2 hours or until a toothpick inserted near the center comes out clean.
  • Cool for 10 minutes before removing from pan to a wire rack to cool completely. Garnish with confectioners' sugar, berries and whipped cream if desired.
 Serve and enjoy!

CREMIGER FRISCHKÄSE KASTENKUCHEN

16 Stücke
     
Zutaten
340g weiche Butter
240g  Frischkäse, weich
250g Zucker
6 Eier
2 Teelöffel Vanille-Extrakt
1 TL Zitronenextrakt
360g Allzweck-Mehl
1/2 TL Backpulver
1/4 TL Salz

Puderzucker,  frische Beeren und Schlagsahne, optional

  • In einer großen Schüssel, Butter, Frischkäse und Zucker schaumig rühren. Die Eier einzeln gut unterrühren, Vanille zufügen dann das Mehl, Backpulver und Salz.    
  • Die Mischung in eine gefettete und bemehlte Kastenform füllen und auf 170°C (150°C Umluft) für 1-1/4 bis 1-1/2 Stunden backen oder solange bis ein Zahnstocher in der Mitte sauber raus kommt.   
  • 10 Minuten in der Form abkühlen lassen dann auf einem Kuchengitter vollständig abkühlen. Garnieren mit Puderzucker, Beeren und Schlagsahne, falls gewünscht.

Bonfire night / Freudenfeur Nacht



This is a bonfire held on the night of the 10st July every year in Portadown to men who died at the Battle of the  Boyne.

On 12th July 1690 beacons were lit as a guide for King William journey to the Battle of the Borne.
The bonfires are generally lit on the night of the 11th July (depending on actual day of week - may be changed to a Friday/Saturday). This is the day before the main parade known as the 12th July. The bonfire in Moygashel, Dungannon, was lit on the Saturday night before the 12th.

10th July is a traditional parade of Orange men and women. These parades are to commemorate the Battle of the Boyne which took place on 12th July 1690 when William of Orange beat the Catholic King James II.

The main source for burning bonfires was traditionally old tyres. These produced a lot of black smoke and fumes which were far from ideal.
More recently wooden pallets are being used as these are easier to build into a predestined shape.
Local residents often ake this opportunity to leave out old furniture, sofas etc which are placed on the bonfire.
Generally bonfires are built as large as possible - the more wooden pallets etc the better.
The bonfire meets certain conditions eg only burn wooden pallets, no burning of flags.

From Lundy's early life or ancestry nothing is known he was in the service of Alexander Macdonnell, Earl of Antrim, "and commanded in the north against the Protestants to march.

By a stratagem of Mountjoy and Lundy succeeded in control of Derry a small garrison of the predominantly Protestant troops under the command of the first Mountjoy to win Lundy got the title of the governor. However, the sympathies of the people in Derry in favor of the Prince of Orange had, Lundy declared himself as a supporter of King William III.
Lundy is therefore reviled as a traitor to this day and is considered a portrait of a solchen.und is today during the bonfire celebrations for the anniversary of the closure of the gates of Derry in 1688 burned symbolically. A 'Lundy' is also a synonym of the Betrayer for trade unionists and loyalists. . Regularly denounced are today, including Prime Minister Margaret Thatcher, Captain Terence O'Neill and Prime Minister David Trimble, as Lundies called.


On this occasion, I have not let it take me to bake a small cake creation – the Bonfire Cake.

Das ist ein Lagerfeuer am Abend des 10. Juli eines jeden Jahres in Portadown, für die Männer die in der Schlacht am Boyne starben.  

Am 12. Juli 1690 wurden Leuchtfeuer als Leitfaden für King Williams Reise in der Schlacht an der Borne erleuchtet.
Das Lagerfeuer wird in der Regel in der Nacht des 11. Juli (- kann aber auf einen Freitag / Samstag geändert werden, abhängig von aktuellen Wochentag) angezündet.

Am 10 Juli findet eine traditionelle Parade von Oranien Männer und Frauen statt. Diese Parade ist zu gedenken an die Schlacht am Boyne die am 12 Juli 1690 stattfand als Wilhelm von Oranien den katholischen König James II schlug.  

Die Hauptquelle für das Brennende Feuer war traditionell alte Autoreifen. Dies erzeugt eine Menge von schwarzem Rauch und Dämpfe, die bei weitem nicht ideal waren, deshalb werden seit kurzem Holzpaletten verwendet, die auch leichter auf zutürmen gehen. Viele Bewohner nutzen diese Gelegenheit um alte Möbel, Sofas, etc. auf dem Lagerfeuer los zu werden. Im Allgemeinen sind diese Freudenfeuer so groß wie möglich gebaut - je mehr Holzpaletten usw. desto besser.
Das Freudenfeuer trifft bestimmte Bedingungen z.B. nur das verbrennen von Holzpaletten – kein verbrennen von Flaggen.

Lundy wird daher bis heute als Verräter beschimpft und gilt als  Bildnis eines solchen und wird noch heute während der Bonfire Feierlichkeiten zum Jahrestag der Schließung der Tore von Derry im Jahre 1688 symbolisch verbrannt. A 'Lundy' ist auch ein Synonym des Verräters für Gewerkschafter und Loyalisten. Regelmäßig angeprangerte werden noch heute, darunter Premierminister Margaret Thatcher, Captain Terence O'Neill und Ministerpräsident David Trimble, als Lundies beschimpft.


Zu diesem Anlass habe ich es mir nicht nehmen lassen eine kleine Kuchenkreation zu backen – ein Freudenfeuer Kuchen.

Campfires Chocolate Torte / Lagerfeuer Schokoladen Torte



Campfires Chocolate Torte 

225g of 70% chocolate, or dark cooking chocolate
225g of unsalted butter
340g of caster sugar
6 medium free-range eggs
1 drop of vanilla essence
160g of ground almonds
140g of white breadcrumbs

Chocolate ganache
110g of 70% chocolate, or dark cooking chocolate
125g of icing sugar
225ml of double cream

Deko
1 bag of Marshmallows (approx. 24 - optional)
6-7 Chocolate Fudge Crème Filled Pirouettes, cut in half
5 individually red hard candy disks, unwrapped
5 individually yellow hard candy disks, unwrapped

  • Preheat the oven to 160˚C/gas mark 3 and line a 22cm spring-form cake tin
  • Start with the cake by melting the chocolate over a bain-marie. Cream the butter and sugar until light and fluffy, beat in the eggs one at a time followed by the vanilla and whisk thoroughly until well combined
  • Making a Bain Marie for chocolate
  • In a bowl, mix together the ground almonds, breadcrumbs and melted chocolate, add to the egg mixture and combine well. Pour the cake mix into the springform tin and bake in the oven for 55 minutes. Remove from the oven and allow to cool
  • For the chocolate ganache, break up the chocolate and place into a large bowl. In a separate pan, bring the cream and icing sugar to the boil and then pour over the chocolate. Stir until the chocolate melts and the mixture is smooth. Set aside to cool
  • Spread the ganache over the cooled chocolate torte using a hot palette knife to ensure it is distributed evenly.
  • Line 15x10x1 inch baking pan with foil.  Spray with non-stick baking spray.  Place red and yellow candies in a plastic bag.  Finely crush the candies with the flat side of a meat mallet or hammer.  Sprinkle the crushed candies onto the sprayed foil-lined pan in a thin layer.  Bake at 180°C for 6 to 8 minutes or until candies are completely melted.  Cool the melted candy completely before handling.
  • Arrange Piroettes in a circle on the top of the cake to resemble campfire logs.  Break the cooled sheet of melted red and yellow candies into pointed shards.  Insert the candy pieces into the top center of the cake and around the "logs" to resemble flames.
  • Roast Marshmallows over a flame and arrange around the base of the cake.

Lagerfeuer Schokoladen-Torte

225g 70% Schokolade oder dunkle Kuvertüre
225 g ungesalzene Butter
340g Zucker
6 mittelgroße Freiland Eier
1 Tropfen Vanille-Essenz
160g gemahlene Mandeln
140g Weißbrotkrümel

Schokoladen-Ganache
110g 70% Schokolade oder dunkle Kuvertüre
125 g Puderzucker
225 ml Sahne

Doko
1 Beutel Marshmallows (24 optimal)
6-7 runde Schokoladenwaffelstangen, halbiert
5 rote harte Bonbons, ausgepackt
5 gelbe harte Bonbons, ausgepackt



  • Den Backofen auf 160˚C vorheizen. Ein 22cm Springform einfetten.

    Beginne mit dem Kuchen durch Schmelzen der Schokolade über einem Wasserbad. Die Butter und Zucker schaumig rühren, die Eier einzeln unterrühren, gefolgt von Vanille und  gründlich mit dem Schneebesen verrühren, bis alles gut vermischt ist.

  • In einer Schüssel die gemahlenen Mandeln, Semmelbröseln und geschmolzene Schokolade hinzufügen verrühren und dann die Ei-Mischung zufügen und alles zusammen verrühren. Den Kuchenteig in die Springform gießen und im Ofen für 55 Minuten backen. Aus dem Ofen nehmen und abkühlen lassen.

  • Für die Ganache, die Schokolade in kleine stücke brechen und in eine große Schüssel geben. In einem separaten Topf die Sahne und Puderzucker aufkochen und dann über die Schokolade gießen. Rühren bis die Schokolade schmilzt und die Mischung glatt ist. Beiseite stellen und abkühlen.

  • Verbreite die Ganache über die gekühlte Schokoladentorte mit einem heißen Spachtel, um sicherzustellen, dass es gleichmäßig verteilt ist.
  • Ein Backblech mit Backpapier auslegen und mit Backspray einsprühen. Rote und gelbe Bonbons in eine Plastiktüte geben und mit dem Nudelholz die Bobons zerkleinern. Die zerkleinerten Bonbons in einer dünnen schicht auf das vorbereitete Backblech verteilen. Bei 180°C ca 6 bis 8 Minuten völlig schmelzen lassen. Die geschmolzenen Bonbons vollständig abkühlen lassen.  
  • Die halbierten Schokoladenwaffelstangen in einem Kreis auf der oberen Seite des Kuchens legen, so dass es ähnelt wie ein Lagerfeuer. Die abgekühlten geschmolzenen Bonbons in spitze Scherben brechen und um die Schokowaffeln herum in den Kuchen leicht rein drücken, so das es wie Flammen aussieht.
  • Die Marshmallows über eine Lötlampe leicht rösten und um den Kuchen herum anlegen.

Mini Yorkshire Puddings with Roast Beef & Horseradish and Crème Fraiche / Mini Yorkshire Puddings mit Roastbeef und Meerrettich und Crème Fraiche


This recipe it is one of the most ingenious buffet-party recipes I've ever come across, and disappears like lightning. The good news is that the Yorkshire puddings can be made ahead and frozen, in which case you need to re-crisp them in the oven, 220°C for 4-5 minutes.

Mini Yorkshire Puddings with Roast Beef & Horseradish and Crème Fraiche

Serves 12
Prep: 10 minutes
Total: 25 minutes

Ingredients
2 tablespoons vegetable oil
40g plain flour
1 medium free-range, beaten
50ml milk
2-3 tablespoon horseradish
200g Creme Fraiche 
12 slices roast beef
Cress to garnish




  • Sift the flour and a pinch of salt into a medium bowl and make a well in the centre. Beat in the egg until smooth, then gradually add the milk, beating until the mixture has no lumps. Putting coldly in the refrigerator covered least 2 hours.
  • Preheat the oven to 220ºC, fan 200ºC, gas 7. Pour ½ teaspoon oil into each hole of a 12-hole non-stick mini muffin tin and place in the oven to heat through.
  • Remove the mini muffin tin from the oven and carefully add ½ tablespoon of the batter into the compartments. Cook in the oven for 15 minutes, until the puddings have risen and are golden in colour. Leave to cool on a wire rack.
  • Crème fraiche with horseradish and with salt and pepper and season. Fill each mini Yorkshire pudding with a couple of pieces beef and a little horseradish crème. Season with black pepper and garnish each with a small sprig of cress.

Dieses Rezept ist eines der genialsten Buffet-Party Rezepte die ich je gesehen habe und verschwindet wie der Blitz.
Die gute Nachricht ist, dass die Yorkshire Puddings im Voraus zubereitet und eingefroren werden können und im ​​Fall wieder knusprig im Ofen aufgebackt werden können,

  • Das Mehl mit einer priese Salz in eine Schüssel sieben, einen Brunnen in die Mitte des Mehls machen. Das Ei glatt rühren, dann nach und nach die Milch hinzufügen, rühren bis die Mischung keine Klumpen mehr hat. Abgedeckt mindestens 2 Std. im Kühlschrank kalt stellen.

  • Den Backofen auf 220ºC (200ºC Umluft) vorheizen. In jedes Loch des Muffinblech ½ Teelöffel Öl gießen und in dem Ofen erhitzen.

  • Das Muffinblech aus dem Ofen entfernen und  ½ Esslöffel Teig in jedes Loch hinein geben. In den Ofen zurück stellen und für 15 Minuten backen, bis die Puddings gestiegen sind und eine goldfarbene Farbe haben. Abkühlen lassen auf ein Drahtgestell.

  • Creme fraiche mit dem Meerrettich verrühren mit Pfeffer und Salz würzen und abschmecken. Jeden einzelnen Yorkshire-Pudding mit jeweils einem Teelöffel Meerrettich-creme und einer Scheibe Roastbeef füllen. Mit schwarzem Pfeffer würzen und mit Kresse garnieren.

BUTTERMILK CAKE ON A CHOUX PASTRY / BUTTERMILCH TORTE AUF EINEN BRANDTEIGBODEN


BUTTERMILK CAKE ON A CHOUX PASTRY

Makes 1 flan 23 cm/10 inches
Preparation time: 35 minutes, plus
3 hours to chill Cooking time: 25 minutes

Choux pastry
250 ml water
60g butter
Pinch of salt
30g caster sugar
150g plain flour
2 eggs
Filling
14 sheets leaf gelatine
1 litre buttermilk
Juice of 2 lemons
100 g caster sugar
2 tsp vanilla sugar (see page 10)
200 ml whipping cream

4 large kiwi fruit, peeled and sliced
1 packet clear gâteau cast
200 g of almond leaves


  • Preheat the oven to 220°C/425°F/Gas Mark 7. Line a large baking sheet with baking paper.
  • To make the choux pastry, put the water, butter, salt and sugar into a saucepan and bring to the boil. Add the flour and stir vigorously with a wooden spoon until the mixture comes away from the base of the pan in a lump, leaving a white film. Remove from the heat and add the eggs, one at a time, beating with an electric mixer after each addition until combined.
  • Put the dough into a piping bag fitted with a medium tip and pipe onto the prepared baking sheet from a distance of 1 cm/Vi inch to make a spiral with a diameter of 23 cm/1 1 inches. Pipe any remaining dough in strips next to the spiral. Place the baking sheet on the middle shelf of the preheated oven and pour a small cup of water onto the floor of the oven. Bake for 25 minutes until golden brown. Remove from the oven and transfer to a wire rack to cool.
  • To make the filling, soak the gelatine in cold water for about 10 minutes. Mix together the buttermilk, lemon juice, caster sugar and vanilla sugar. Squeeze the water out of the gelatine, put the gelatine into a saucepan with a little water, and heat over a low heat, stirring constantly, until dissolved. Stir into the buttermilk mixture. Chill the mixture until it starts to set. Whip the cream until it holds stiff peaks and fold into the buttermilk mixture in two batches.
  • Clip a 23cm round springform ring around the choux pastry spiral. Pour in the filling and spread evenly. Chill for 3 hours.

  • Arrange the kiwi slices on the cake. The glaze according to package directions cook let cool slightly and then pour on the Kiwis. Cold again for one hour in the refrigerator.

  • Set the cake carefully on a cake plate and remove the cake ring. Lightly fry almonds without fat in a pan and gently press the almonds around the edge of the cake with the flat of your hand.

BUTTERMILCH TORTE AUF EINEN BRANDTEIG

23cm Springform
Zubereitungszeit: 35 Minuten
Backzeit: 25 Minuten
3 Stunden Kühlzeit

Brandteig
250 ml Wasser
60g Butter
Prise Salz
30 g Zucker
150g Mehl
4 Eier
Füllung
14 Blatt Blattgelatine
1 Liter Buttermilch
Saft von 2 Zitronen
100 g Zucker
2 TL Vanillezucker 
200 ml Schlagsahne

4 große Kiwi, geschält und in Scheiben geschnitten
1 Päck. klarer Tortenguss
200g Mandelblätter


  • Den Backofen auf 220°C vorheizen. Ein großes Backblech mit Backpapier auslegen.

  • Um den Brandteig zu machen, das Wasser, Butter, Salz und Zucker in einen Topf geben und zum Kochen bringen. Das Mehl mit einem Holzlöffel kräftig einrühren, bis die Mischung zu einem Klumpen wird und auf dem Topfboden ein Weißen-Film entstanden ist. Vom Herd nehmen und die Eier einzeln mit einem elektrischen Mixer unterrühren.

  • Den Teig in einen Spritzbeutel mit mittlerer Spitze füllen und auf das vorbereiteten Backblech aus 1 cm Entfernung eine Spirale mit einem Durchmesser von 23 cm spritzen. Vom restlichen Teig neben der Spirale streifen spritzen. Das Backblech auf die mittlere Schiene in den vorgeheizten Ofen schieben, eine kleine Tasse Wasser auf den Boden des Ofens stellen und  25 Minuten lang backen, bis sie goldbraun sind. Aus dem Ofen nehmen und einem Kuchengitter abkühlen lassen.

  • Für die Füllung, die Gelatine in kaltem Wasser etwa 10 Minuten einweichen. Die Buttermilch, Zitronensaft, Zucker und Vanillezucker zusammen verrühren. Gelatine ausdrücken und in einem Topf mit etwas Wasser und auf kleiner Hitze unter ständigem Rühren auflösen. Danach die Gelatine in die Buttermilchmischung rühren, kalt stellen bis die Buttermilchmischung anfängt zu setzen. Die Sahne steif schlagen und unter die Buttermilchmischung in zwei Chargen unterheben.

  • Einen 23cm Runden Tortenring um den Brandteig Spirale setzen und die Füllung gleichmäßig darauf  verteilen. Für 3 Stunden kalt stellen.
  • Kiwischeiben auf der Torte verteilen. Tortenguss nach Packungsanweisung kochen etwas abkühlen lassen und dann auf die Kiwis gießen. Wieder für eine Stunde in den Kühlschrank kalt stellen.  
  • Torte auf eine Tortenplatte setzen vorsichtig den Tortenring lösen. Mandeln ohne Fett in einer Pfanne leicht anrösten und mit der flachen Hand die Mandeln vorsichtig um den Rand der Torte andrücken.
